A vibrant mix of fresh ingredients paired with lightly seasoned grilled chicken is the perfect entrée to savor during the summer months.

Ingredients  :

  • 4 boneless skinless chicken breast halves
  • Nonstick cooking spray
  • 2 cups chopped mango
  • 1 small red bell pepper, seeded and chopped
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup chopped cilantro
  • 2 tablespoons minced red onion
  • 1 garlic clove, minced
  • 2 tablespoons fresh lime juice
  • 1/8 teaspoon sugar
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 teaspoon steak seasoning blend, such as Montreal

Method :

Let chicken stand at room temperature for 10 minutes. Meanwhile, coat grill rack with nonstick cooking spray; heat coals or gas grill for direct heat. In a medium bowl, combine mango, bell pepper, jalapeno, cilantro, onion, garlic, lime juice,sugar, salt, and pepper.

Sprinkle chicken with steak seasoning blend; place chicken on grill rack 4 to 5 inches from medium heat. Grill until chicken is no longer pink in the thickest part,12 to 15 minutes, turning once. Transfer to a platter; let stand 10 minutes. Toss salsa;serve salsa over chicken.
